| Topic: Good curry | | Posted : 07/05/08 / Views : 291 / Replies : 4 | | |  | Here's a good curry recipe, shamelessly nicked from "The new tastes of India" by Sreedharan. It's a garlic curry, but if you don't want to eat that much garlic in one go, the sauce is nice with plenty of other things, chick peas in particular.
Serves 4
75g tamarind pulp
cooking oil
1/2 teaspoon fennel seeds
1/2 teaspoon fenugreek seeds
10 neem leaves
3 onions, finely chopped
2 fresh green chilies, finely chopped
1/2 teaspoon tumeric powder
1/2 teaspoon chili powder
2 tomatoes, finely chopped
200g garlic cloves, peeled
Place the tamarind pulp in a bowl and cover with 850ml hot water. Break it up and leave to soak for 1/2 hour. Sieve the mixture, and discard the seeds/skin etc.
Heat the oil in a large pan, and add fennel and fenugreek seeds. Brown them slightly, and add the neem leaves, onions, and green chilies. Cook on a medium heat for five minutes until the onions are soft.
Add tumeric and chili powder, mix well, and add the tomatoes. Cook for five minutes to give a thick onion gravy.
Add the garlic, then the tamarind liquid. Lower the heat and cook for 15 minutes or until the mixture is thick and the garlic is well cooked.
Final step: scarf the lot in under 30 seconds. |

|  | | Reply #3: Re: Good curry | | Posted : 06/05/08 | | |  | Neem leaves are normally used dried, and look a bit like small bay leaves. They are not that vital to the recipe though, and can be left out if you don't have any.
They're sometimes called "curry leaves", and most Indian/Asian groceries will have them.
