|  | | One of the things I miss from my pre-vegan days is scrambled egg. Does anyone have a recipe for a vegan version? |

|  | As a new born veggie I'm looking forward to going vegan next. I dont understand why eggs are out? Chickens lay eggs anyway, and if they are unfertilised isnt it OK to use them?
Am I missing something? |

Scrambled 'Egg' on Toast
10 oz (285g) plain tofu
2 tbsp vegetable oil
1 tsp turmeric
1 tsp herbs (chives or parsley)
salt and pepper to season
wholemeal toast spread with margarine
1. Mash the tofu evenly and fry it in the vegetable oil until evenly cooked.
2. Add the turmeric, herbs and season to taste. Cook a further few minutes. Serve on crispy wholemeal toast spread with margarine.
You can also add fried mushrooms, sweet or hot peppers, onions, garlic… anything you like… to vary the recipe |

No, chickens are not "there anyway", some are broilers, bred for meat. Others are raised to produce eggs.....usually battery hens who were said by a panel of "experts" to be the animal that suffers most in food/dairy production, as quoted in the Daily Mail.
Egg-laying hens natural lifespan would be about 10 years,.....age at which they are typically killed is 18 months. |

|  | Yes of course you are right regarding the factory farming of chickens, and for anything even the supposed free range!
My hypothesis applied to say owning a rescued hen and having it as part of the family more than anything?
It is important us vegetarians, as opposed to vegans, do remember where the eggs are coming from and indeed the dairy products as well.
I tried to go veggie around 20 years back and found it very, very difficult as there was very little choice out there for veggies. I tried again about 2 or 3 years ago and was amazed at the choice we now have and could never go back. I must go vegan but something is holding me back from that commitment, and it's not ignorance which makes it even worse.
I find it much, much harder than giving up smoking even, which was hard enough.
So all tips appreciated. |

For info about dairy , these explain a bit with regards to animal welfare anyway, not about the poor human health people suffer from consuming dairy and egg.

|  | | Walkawhile, there are people who rescue battery hens and try to rehome them. They often struggle to find them good homes as there are so many. You could always home some of these and use their eggs, there's no cruelty in that. |
