| Topic: Melting Mushrooms | | Posted : 18/05/08 / Views : 285 / Replies : 1 | | |  | I designed this recipe because I was bored with quorn, tofu, etc. It uses all natural ingredients and only takes a few minutes to assemble and cook. This is a veggie rather than vegan recipe but I think that you can get vegan mozzarella- if not, any cheese substitute which is very mild and melts well will do.
You need; 2 Portobello mushrooms (per serving), fresh spinach, cherry tomatoes, mozzarella, white wine and salt, pepper and chilli flakes.
Peel two portabella mushrooms and place, stalk up, in a small, well oiled, bread tin. Using a pastry brush (or a rolled up sheet of kitchenroll) brush a little dry white wine into the gills of the mushroom. Chop up cherry tomatoes (each one into 3 slices, and place tomato slices in a ring around the stalk. Then add two layers of fresh spinach to the mushroom cup, then a good covering of mozzarella. Finally, sprinkle chilli flakes, salt and pepper over the mozzarella.
Place in a medium oven and check after two minutes. In this recipe, the cheese should melt and fill the base of the bread tin. If the cheese is already melted, add a little white wine (carefully) and stir in with a fork. Remove mushrooms when they look cooked- sticking a fork in to check tenderness is a good indicator. (The spinach and tomatoes should have reduced down and the mushroom should be tender.)
To serve, first take out the mushrooms, then spoon the cheesy sauce over them. This is really nice as a lunch or light supper as none of the flavours are too rich or heavy.
NB: you will need to check on the mushrooms every few minutes- they can cook very quickly. Also watch out for hot cheese etc. |

After layering on the spinach, crush 1-2 plump cloves of garlic and spread over the top of the spinach leaves. Then complete mushrooms as per above instructions. |
